Chicken Fajitas



Serves 6

6 whole grain 8 inch tortillas
1/2 yellow onion
1 small red bell pepper
1 small green bell pepper
2 large chicken breasts (trim fat off)
1 packet of Ortega low sodium Fajita seasoning
All natural or homemade guacamole (I like Wholly Guacamole- All Natural!)
Hot Salsa
Shredded Mexican Cheese
Light Sour Cream
Extra Virgin Olive Oil
3/4 cup of water

Cut peppers, onion and chicken into thin strips.  Heat Olive oil in a large pan and cook chicken until no longer pink.  Add onions and peppers.  Stir.  Add water and fajita seasoning and stir to combine.  Let cook until chicken is no longer pink and seasoning thickens.  Heat tortilla wraps in microwave for 30-60 seconds.  Top with chicken, onion and pepper mixture and add additional toppings that you like.
