Clean Eating Eggs Benedict

This recipe doesn't have Hollandaise with it.  For me personally, the poached egg when broken over the english muffin is more than enough for me!  


Wheat or Whole Grain English Muffin
2 slices Canadian Bacon
2 Eggs
Olive Oil
Dash of Salt
Fresh Ground Black Pepper


Sautee asparagus in olive oil, salt and pepper
I have an egg poaching pan that I use but if you don't click here for instructions on poaching an egg in a regular pot
Toast your english muffin.  While it's toasting, spray a frying pan with a little cooking spray and cook the canadian bacon on both sides

Layer your english muffin with the cooked canadian bacon and place a poached egg on each side.  Serve with sauteed asparagus
