Clean Eating Chicken Curry

  • 1 tbsp EVOO
  • 1 medium onion thinly sliced
  • 4 cloves of garlic, diced
  • 1 tsp fresh ginger, grated
  • 3 tbsp curry powder
  • 1/2 tsp cinnamon
  • 1 tsp cumin
  • 1 Lb free range chicken breast, cut in chunks
  • 1 cup coconut milk
  • 1/2 cup water
  • 1/2 cup greek yogurt
  • Juice of 1/2 a lemon (optiional)


Saute onions, add garlic, ginger, curry, cinnamon and cumin.
Add chicken. Cook for 2 minutes.
Add coconut milk, water and yogurt. Stir to coat.
Let simmer stirring occasionally.
20 minutes or until chicken is cooked.

Add lemon juice (optional)

I simmered for about 30 min and let sit for about 10 and it thickened up a little better. Definitely tastes better when served warm and not overly hot.
