Roasted Butternut Squash with Blue Cheese and Pecans

Don't you just LOVE a healthy meal that you can prep ENTIRELY in the oven?

That was dinner last night for me!  Tasty roast chicken, honey balsamic brussels sprouts and this AMAZING butternut squash with blue cheese and pecans.

Butternut squash and blue cheese?? Might sound odd.....but seriously, I cannot get enough of this combo you guys! It is mouth wateringly good! (I think I just made that word up).

Anyway, super easy, and if you don't have much time to fuss with a butternut squash (like me) I picked up some bags of frozen cubed butternut squash in the organic frozen department at giant eagle.  Depending on your grocery store you may have fresh cubed butternut squash if you're lucky!

Serves 4


1 medium sized butternut squash (approx 2-2.5lb) or a couple of bags of frozen butternut squash cubes around the same amount
1 Tbsp EVOO
EVOO Spray or extra EVOO to brush baking sheet
1-2 tsps fresh rosemary (a little less if using dried)
1/2 cup pecans, chopped
1/3 cup blue cheese crumbles (alternatives that would be good include goat cheese, gorgonzola, feta)
Salt and pepper to taste


  • Preheat oven to 400F/200C. Cut ends of butternut squash, then cut in half, Peel the outside layers and remove seeds.  Chop into approx 1 inch pieces and try to keep all fairly close in size for even cooking.
  • Finely chop rosemary leaves (if using fresh)
  • Toss butternut squash (fresh or frozen) in olive oil, rosemary, salt and pepper. Line a baking sheet with aluminum and spray with EVOO (or brush with extra oil).
  • Spread butternut squash evenly and roast for about 40-50 minutes, tossing half way through until lightly browned (if using frozen butternut squash you may want to give this a bit longer but check periodically to ensure they don't burn).
  • Add chopped pecans for last 15 mins.
  • Sprinkle butternut squash with blue cheese and serve.

After you complete the workout, you'll ((COMMENT)) on the post to let me know you have done it. Tracking your progress this way is SO important.

Why would I want you to keep track of your progress?
1) Because I want you to succeed. I'm here to be your daily accountability partner!
2) There will be a prize awarded to the STAR challenger at the end! How do you become a star challenger? You post each day, share your progress and encourage others in the group. That's right...7 days of prize opportunities...and perhaps a few bonus prizes too!

Easy Chicken Taco's!

These taco's are spectacularly good, incredibly easy to make and make AWESOME leftovers. In fact, the image above is from my lunch leftovers after making these for Taco Tuesday this week (which you'll see below).

And I promise....they were just as good for lunch 2 days later!  Find yourself with too much meat? Throw it in a freezer baggie and save the rest for a super quick meal you can defrost and throw together on those nights when time is not a luxury we have! AND, these are easily adaptable to make in the crockpot, which I've included in the directions below.

1 1/2 pounds boneless, skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/2 teaspoon chile powder
1/2 teaspoon garlic powder
1/4 teaspoon chipotle chili powder
1/2 teaspoon onion powder
1 cup grape tomatoes, quartered
1/2 red onion, finely diced
1/4 cup cilantro (optional)
1 lime, juiced
8 to 12 (4-inch) corn tortillas
4 ounces queso fresco cheese or cotija cheese, crumbled
1 avocado, sliced
extra limes for garnish
1/4 cup chicken broth

Quick chipotle lime crema
3 tablespoons greek yogurt
3/4 cup half and half
1 tablespoon adobo sauce (from a can of chipotles in adobo)
juice of half a lime
zest of half a lime
1/8 teaspoon salt

Additional optional toppings 
Hot sauce of preference
Shredded lettuce


Preheat the oven to 375 degrees F.

Heat a large oven-safe skillet over medium-high heat. Season the chicken with the salt and pepper. Add the olive oil to the skillet and once it's hot, add in the chicken. Brown the chicken on both sides, about 2 minutes per side. Cover the skillet and place it in the oven, roasting for 20 minutes. In a bowl, combine the cumin, paprika, chili powders, garlic powder and onion power in a bowl. Set aside.

OPTIONAL CROCKPOT ADAPTATION- Toss chicken, spices and 1/4-1/3 cup chicken stock in the crockpot and cook on low for approximately 4 hours 

While the chicken is cooking, combine the diced onion, tomatoes and cilantro (optional) in a bowl with the juice of the lime. Add a sprinkle of salt and pepper. Set aside.

In another bowl, whisk together the yogurt, half and half, adobo, lime juice and zest and salt, whisking well to combine. Set aside.

As soon as the chicken is finished cooking, add it to the bowl of your electric mixer, or a bowl that you can use a hand mixer with.  Turn the mixer on to low speed for a few seconds to break up the chicken. Add in the spices that you mixer before and mix the chicken on low speed for a full minute or two to completely shred it and mixx with the spices. Heat chicken broth in microwave and pour of shredded chicken. Toss well.  This helps to keep the chicken nice and moist.

Taco Tuesday Dinner!

If following the 21 day fix plan, Core De Force, Hammer & Chisel or any other Beachbody program that uses portion control containers, use these to measure out your portions. 2 corn tortilla's count for 1 yellow.

To assemble the tacos, place the chicken in a tortilla and top with the quick salsa, the crumbled cheese and a drizzle of the crema. Serve with avocado on the side or on top and a fresh squeeze of lime. I like to mash my avocado into a guac like consistency and top my taco's with it.

10 minute anywhere, anytime Prison Workout Challenge

Anywhere, anytime workout. Short workout challenge.

Can you carve out 10 minutes for this Prison Workout Challenge?

Why the name? Prisoners only have a small cell to work with, and while you may never be in the exact same setting (hopefully), sometimes you need a workout that hits every muscle group without needing a lot of space or equipment. Pushups and squats may not be the most exciting moves, but there's a reason they're staples in almost every workout: They work!

Complete this circuit as many times as you can in 10 minutes to burn fat and build lean muscle fast!
 10 squats
 10 regular pushups
 10 lunges (on each leg)
10 narrow (triceps) pushups
10 jump squats
 10 crunches

Repeat throughout the day as necessary if you're short on time and find yourself with a couple of 10 minute slots free. A 10 minute workout is better than no workout and this definitely got my heart racing and sweat pouring.

Butternut Squash au Gratin

Fall Recipes. Butternut squash recipes. 21 Day Fix recipes.

When it comes to Fall food, it doesn't get much more festive than butternut squash, and when I came across this recipe recently I knew I had to try it. I adapted it a little and it completely surpassed my expectations.

Oh, and 21 day fixers, you don't even have to use a yellow! Though there is a piece of bread used in this, when divided over the servings it's such a minimal amount that I don't count it. For those not following the 21 day fix program you can ignore that!

Serves 6 (approximately 1 cup servings)


5 cups (3/4-inch) cubed peeled butternut squash (about 2 pounds)
1 slice wheat bread
4 tsp EVOO, divided
1 large onion, diced
2 tablespoons chopped fresh sage
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Cooking spray
3 ounces crumbled blue cheese


1. Preheat oven to 400°.

2. Steam butternut squash, covered, 10 -15 minutes or until tender but not mushy.

3. Place bread in a food processor, and pulse until course crumbs. Sautee in 2 tsps EVOO along with 1 tbsp sage and a dash of salt and pepper until toasted golden brown.

4. Heat remaining 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add diced onion to pan; sautee 5 minutes or until tender, stirring occasionally. Transfer the onion mixture to a large bowl. 

5. Add butternut squash, remaining chopped sage, salt, and black pepper to taste to the bowl with the onions. Toss gently to combine. Spoon squash mixture into an 11 x 7–inch baking dish coated with cooking spray. Bake at 400° for 20 minutes. 

6. Sprinkle crumbled blue cheese evenly over squash mixture, and sprinkle evenly with breadcrumb mixture. Bake an additional 10 minutes or until the cheese is melted and crumbs are golden brown.

Gluten Free Healthy, Quick Recipes.

Not only was this incredibly tasty, but start to finish it only took about 30 minutes to prepare and I had leftovers for lunch #Bonus!

Perfect fall recipe that will fill your tummy and leave you OH so satisfied!

Did I mention it's also Gluten Free?

TIP: If you don't like too much heat, cut back on the chili powder and use cherry tomatoes instead of fire roasted tomatoes!

Serves 3


1 large green bell pepper, diced
1 large yellow onion, diced
1 can fire roasted tomatoes
3/4 pound ground turkey (12 oz)
2 tsp cumin
2 tsp chili powder
2 tsp paprika
2 tsp oregano
1.5 cups cooked brown rice (minute rice packets or microwavable pouches such as uncle ben's or Aldi are great)
3 tsps EVOO
2-3 tsps lime juice
Approx 1/3 cup shredded cheese
Salt and pepper to taste


    Gluten Free, Quick, Healthy Recipes.
  1. Add 1.5 tsps of EVOO in a large skillet over a medium/high heat
  2. Add ground turkey and season with salt and pepper
  3. Allow turkey to cook through until no longer pink and slightly brown on the outside.  Season with 1 tsp each of cumin, chili powder, paprika & oregano.
  4. Set turkey aside in a bowl and add remaining 1.5 tsps of oil to pan.
  5. Add your bell pepper and onion and cook until softened
  6. Add fire roasted tomatoes and juices, cook for a few minutes until cooked through to your liking. 
  7. Meanwhile, cook brown rice (if using instant, follow package directions but should take 60-90 seconds in the microwave)
  8. Add remaining spices to veggie mixture (1 tsp each of cumin, chili powder, paprika, oregano)
  9. Add 1.5 cups of brown rice to veggies and cooked ground turkey
  10. Add lime juice. Stir everything to combine. Season with additional salt/pepper to taste or additional seasonings if you prefer.
  11. Add your cheese. Stir in or sprinkle on top!

Post vacation 3 Day Refresh!

This is my "I don't know where to look" face 😂

Sunday night I returned from a very indulgent 10 day trip to Northern Ireland.☘☘☘

As an online health and fitness coach it always seems to surprise people that I don't live my life completely obsessed with fitness and nutrition or denying myself simple pleasures we all like to enjoy every day.

Guys, when I go on vacation, I GO ON VACATION! I take a vacation from my routine, I enjoy things I don't get the opportunity to enjoy regularly, and I focus on spending time with close friends and family and taking in the local culture.

I don't go on vacation worrying about where I'm going to get a workout in...though I can tell you my feet took a pounding on this trip with all the sightseeing we did.

I don't go on vacation worrying about what the healthiest thing on the menu for dinner is. I enjoy the experience.

I know that when I get home, I'll get right back on track as fast as I can and that starts TODAY for me.

I am 100% all in for another round of the 3 day refresh, something that has worked wonders for me in helping me lose holiday bloat and water weight and prime my body to jump into a new program. I absolutely indulged on my Ireland vacation and loved every minute of it, but I'm ready to get back to my healthy roots.

So for the next 3 days I will be drinking 3 daily shakes, a fiber drink, plenty of filtered water, plus eating a wide array of fresh fruits, vegetables and healthy fats to keep my energy and metabolism going.

I've lost anywhere between 3-9lb on the 3 day refresh, but the scale isn't what matters here, it's how it makes me feel. I ALWAYS feel healthier, better in my clothes and MUCH less bloated by the end. Sometimes it's on the last day I get the best results, sometimes it's 1 or 2 days after I've finished it. Everyone is different. Each experience with this refresh is slightly different for me.

I'm excited to share my progress each day with you and tracking/documenting my journey through here and SnapChat (Follow me @JulianeRussell)

My goals:

Lose 3-5lb
Lose 3" of bloat from my stomach
Better energy

After that, I'm jumping into the Master's Hammer & Chisel program!

In the Beachbody world, Thursdays are a pretty exciting time because we get a chance to celebrate major achievements, extending this celebration because it's well deserved!

When Beachbody came into my life, I had no idea that it would bring this incredible woman into it too. Jade and I met completely by chance online, and I had no idea that just a few months later we'd be wandering around Universal Studios acting like members of Harry Potter's BFF crew at Hogwarts (seriously, it's a blast if you haven't been!)

When Jade became a coach I KNEW she was destined for great things. She has a heart of gold and a true desire to pay it forward and help other people achieve their health and fitness goals, falling in love with all that Beachbody has to offer, just as she has done!

She is an amazing wife, daughter, 1st Lieutenant in the Army, a truly top notch friend and an incredibly caring coach and I could NOT be more excited to shout her out tonight for a fantastic accomplishment!

In her first 3 months of being a coach, Jade has impacted the lives of at least 9 people, helping them work on their health and fitness goals, and in turn has earned her FREE ticket to next year's Beachbody Summit event in NEW ORLEANS!

Sometimes the emotions are just so strong, that the right words are hard to find.

Let me tell you why the picture above means SO much to me, and let me try to do it without crying.

Last year I sat behind a computer and I felt an ache in my heart. Life was good, I am by no means living a difficult life. I have been blessed with a great family and incredible friends.

But something wasn't right.
Something was missing.

Last year I sat behind my computer and watched someone I had admired and followed for 2 years be celebrated for an incredible achievement....becoming the TOP coach in Beachbody and bringing her team of amazing coaches with her as the #1 team in the company.

I felt such a hole in my heart for having tried coaching and given it up in 2013. I let fears get the better of me. I let stress in other areas of my life get the better of me and I let go of my dreams.

Last year I knew this team and this company was something I truly wanted to be a part of. Not only had Beachbody made a SIGNIFICANT difference in my life with my health and fitness goals, helping me lose weight AT HOME with Insanity and the 21 Day Fix, but it had given me something so much more than that:

Fast forward a year to this past Saturday night, and I literally had to pinch myself backstage as I braced myself to walk out to surprise and celebrate Melanie Mitro for becoming the Top Coach in Beachbody for a 2ND YEAR running. Except this time I was THERE!

I got to experience this first hand, in person. I got to hear the music, feel the excitement, stand beside Beachbody's top executives, surrounded by Diamond coaches (myself included) who are ROCKING their at home health and fitness businesses and congratulation my coach for all she has accomplished!
I didn't start out with a background in health and fitness.....but what I started with was experience. 
  • Experience feeling uncomfortable in my own skin 
  • Experience having NO idea what direction my life would be going in and no hope for a career I would truly love 
  • Experience wishing, wanting, yearning for something more, something better 
Along the way I've GAINED experience in learning how to eat clean, lose weight, flex my willpower muscles, learn discipline, learn how to FUEL my body for what it needs and achieve an almost 20lb weight loss.

I GAINED experience in how to help others do the same, starting and maintaining a successful online health and fitness coaching business and share with others this opportunity to do the same....from the comfort of our own HOMES!
A year ago....I didn't know if I could do this......but I knew I wanted to and so I jumped in with both feet, into the dark, into the unknown and I just went for it.

Taking my dreams into my own hands:

  • Got me on stage, in front of 25,000 beachbody coaches, beside the #1 coach in the company, celebrating her achievements and the accomplishments of our team. 
  • Gave me the chance to work out with 2 of my FAVORITE celebrity Beachbody Trainers, Shaun T (creator of Insanity and Cize) and Autumn Calabrese (creator of the 21 Day Fix program and co-creator of The Master's Hammer & Chisel). 
  • Gave me the chance to meet top coaches from all over the country and Canada too! 
  • Allowed me to make amazing new friends 
  • Provided me with the opportunity to hear from some world renowned speakers such as Gary Vanderchuk and Maysoon Zaid (both of which if you haven't heard of them you NEED to look them up...they are INCREDIBLE!

Pesto Pasta with Sun Dried Tomatoes

Serves 4

21 Day Fix containers (approx)- 2 yellow2 blue (pesto and cheese), 1/2 green


  • 8 ounces Delallo Organic Gemelli pasta (or other whole wheat pasta of your choice)
  • 1 pound asparagus, trimmed and cut into 1 inch pieces
  • 1 tbsps Extra Virgin Olive Oil
  • Salt and pepper to taste
  • 1/2 cup pesto
  • 1/3 cup julienned sun dried tomatoes in olive oil, drained
  • 1/2 cup shredded mozarella

Feel free to use additional veggies! Red onion and broccoli would go GREAT in this dish!
Add chicken breast or chopped, sauteed chicken cubes for a meat component. Would also go great with salmon.


  • In a large pot of boiling water, cook pasta according to package instructions; drain well
  • In a deep pan, sautee asparagus pieces in 1 tbsp EVOO until cooked through and lightly browned
  • Add pasta, sun dried tomatoes and pasta. Cook until heated through.
  • Add 3/4 of the shredded mozzarella and toss to combine. Turn off heat.
  • Serve with remaining shredded mozzarella on top.
