Lemon Dijon Pork Chops topped with Goat's Cheese

Pork Ingredients

2 tbsp EVOO
2 tbsp lemon juice
2 tbsp dijon mustard
1 tsp dried oregano
4 cloves garlic, minced
1/2 tsp dried thyme
1 tsp onion powder
1 tsp worcestershire sauce
1 tsp white wine vinegar
1/2 tsp sea salt
1/2 tsp fresh ground black pepper
4 pork loin chops
4 oz crumbled goat cheese


  1. In a small bowl combine all ingredients from EVOO through black pepper. Stir well to combine to make marinade
  2. In a large zip lock bag combine marinade and pork chops. Seal bag and place in the refrigerator. Make sure marinade is evenly distributed over meat. Let marinade for at least 3 hours..
  3. Remove meat from bag and place on a hot grill. Cook through until meat is no longer pink (times will vary depending on the thickness of your pork chops)
  4. Remove and top with crumbled goat cheese.

Serving Suggestion

Serve with sauteed vegetables in lemon pepper seasoning (I like a medley of bell peppers, carrots, onions and asparagus) and some brown and wild rice (I like the Minute- Ready to serve individual pots)
