Guys, SERIOUSLY! I mean, HOLY MOTHER OF GOD! This recipe is to die for. If you feel like the 21 Day Fix Extreme is too restrictive for you, think again! This recipe is a perfect example of thinking outside the box and getting creative in the kitchen. Oh and it requires SO FEW ingredients!

Adapted from this Cajun "pasta" recipe.
To make this recipe vegan simply remove the chicken!
8oz chicken breast
Balsamic vinegar (optional) or use Blackened Chicken recipe
2 medium zucchini squash
1 red, 1 green and 1 yellow bell pepper, thinly sliced
1 tablespoon coconut oil
2 tsp cajun seasoning (adjust depending on the amount of heat you like but this is moderate)
1 tsp Salt
Pepper to taste
- Marinade chicken in Balsamic Vinegar for a couple of hours or overnight and then cook on a grill pan or barbecue. The extra charring add's great flavor! OR prepare chicken using Blackened Chicken Recipe. Cut into bite size pieces.
- Using a spiralizer or julienne peeler, create noodles from the zucchini's. Place noodles in a large msh strainer, sprinkle generously with salt and toss to combine. Allow to sit over a bowl for at least 30 minutes to release moisture. Rinse with water and pat dry.
- Melt coconut oil in a pan and add your peppers. Sautee until cooked through and slightly charred. About 5-8 mins.
- Side Note: You can add a variety of veggies here to your liking. Mushrooms, tomatoes, onions, spinach etc.
