21 Day Fix Extreme Cajun Zucchini Noodles, peppers & Blackened Chicken

21 DFX Recipes. Cajun Zucchini Noodles, peppers and blackened chicken.

Guys, SERIOUSLY! I mean, HOLY MOTHER OF GOD! This recipe is to die for. If you feel like the 21 Day Fix Extreme is too restrictive for you, think again! This recipe is a perfect example of thinking outside the box and getting creative in the kitchen. Oh and it requires SO FEW ingredients!

21 Day Fix Extreme approved and I'm eating this on my Extreme days for the Countdown to Competition Plan!

Adapted from this Cajun "pasta" recipe.

To make this recipe vegan simply remove the chicken!

Serves 2

Ingredients

8oz chicken breast
Balsamic vinegar (optional) or use Blackened Chicken recipe
2 medium zucchini squash
1 red, 1 green and 1 yellow bell pepper, thinly sliced
1 tablespoon coconut oil
2 tsp cajun seasoning (adjust depending on the amount of heat you like but this is moderate)
1 tsp Salt
Pepper to taste

Directions


  1. Marinade chicken in Balsamic Vinegar for a couple of hours or overnight and then cook on a grill pan or barbecue. The extra charring add's great flavor! OR prepare chicken using Blackened Chicken Recipe. Cut into bite size pieces.
  2. Using a spiralizer or julienne peeler, create noodles from the zucchini's. Place noodles in a large msh strainer, sprinkle generously with salt and toss to combine. Allow to sit over a bowl for at least 30 minutes to release moisture.  Rinse with water and pat dry.
  3. Melt coconut oil in a pan and add your peppers. Sautee until cooked through and slightly charred. About 5-8 mins.
    • Side Note: You can add a variety of veggies here to your liking.  Mushrooms, tomatoes, onions, spinach etc.
  4.  Add zucchini noodles and cajun seasoning and cook for 2-3 minutes. Season with black pepper and serve.

For a long time I was paralyzed by fear.

-> It requires being willing to fail forward. Every single one of us coaches has failed at something in this business. You have to give yourself time to learn and grow and continue to try something new. --> That's how we fail forward. That's how we continue to improve.
-> It requires a willingness to LEARN and GROW!

But the rewards, are worth every second you invest. What I get from this, EVERY DAY, is hope, happiness and the opportunity to have an impact on people's lives. I smile every day, because every day I see someone who has achieved another milestone, whether that's in their fitness or in their career.

Hazelnut Latte Shakeology


Ingredients:

1 cup unsweetened vanilla almond milk
1 scoop Cafe Latte Shakeology
2 tbsps. chopped hazelnuts
1 tsp. pure hazelnut extract
1 cup ice

Blend and enjoy!

21 Day Fix: 1 Red, 1/2 yellow, 1 orange

Almond Joy Shakeology



  • 1 can light coconut milk or 12 oz unsweetened vanilla almond milk  or 12 oz unsweetened Almond Coconut milk (Almond Breeze)
  • 2 Tsp natural almond butter or 1/4 cup raw almnds
  • 1/4 cup unsweetened coconut flakes
  • 1 tsp vanilla extract
  • 1 scoop chocolate shakeology


Blend all ingredients together and enjoy!

Chocolate Shakeology Fudgscicles

Chocolate Shakeology Desserts.

Ingredients

1-1 1/2 tsp Chocolate Shakeology
1 tbsp natural peanut butter
1 cup skim milk or unsweetened vanilla almond milk

Directions

Mix all ingredients together in a blender.
Pour into 4 popscicle molds.
Freeze until completely solid.


Tip: Try a little variety. Add some mint extract for Mint Chocolate Shakeology Fudge Pops or Caramel extract. Even coconut extract with unsweetened almond coconut milk would be good!
