Unstuffed Pepper Skillet

Gluten Free Healthy, Quick Recipes.


Not only was this incredibly tasty, but start to finish it only took about 30 minutes to prepare and I had leftovers for lunch #Bonus!

Perfect fall recipe that will fill your tummy and leave you OH so satisfied!

Did I mention it's also Gluten Free?

TIP: If you don't like too much heat, cut back on the chili powder and use cherry tomatoes instead of fire roasted tomatoes!

Serves 3

Ingredients

1 large green bell pepper, diced
1 large yellow onion, diced
1 can fire roasted tomatoes
3/4 pound ground turkey (12 oz)
2 tsp cumin
2 tsp chili powder
2 tsp paprika
2 tsp oregano
1.5 cups cooked brown rice (minute rice packets or microwavable pouches such as uncle ben's or Aldi are great)
3 tsps EVOO
2-3 tsps lime juice
Approx 1/3 cup shredded cheese
Salt and pepper to taste


Directions


    Gluten Free, Quick, Healthy Recipes.
  1. Add 1.5 tsps of EVOO in a large skillet over a medium/high heat
  2. Add ground turkey and season with salt and pepper
  3. Allow turkey to cook through until no longer pink and slightly brown on the outside.  Season with 1 tsp each of cumin, chili powder, paprika & oregano.
  4. Set turkey aside in a bowl and add remaining 1.5 tsps of oil to pan.
  5. Add your bell pepper and onion and cook until softened
  6. Add fire roasted tomatoes and juices, cook for a few minutes until cooked through to your liking. 
  7. Meanwhile, cook brown rice (if using instant, follow package directions but should take 60-90 seconds in the microwave)
  8. Add remaining spices to veggie mixture (1 tsp each of cumin, chili powder, paprika, oregano)
  9. Add 1.5 cups of brown rice to veggies and cooked ground turkey
  10. Add lime juice. Stir everything to combine. Season with additional salt/pepper to taste or additional seasonings if you prefer.
  11. Add your cheese. Stir in or sprinkle on top!

Vanilla Latte Shakeology


Ingredients
1 scoop vanilla shakeology
1 cup brewed coffee (chilled)
1/2 cup unsweetened vanilla almond milk
1 tsp. pure maple syrup or raw honey

Blend and enjoy

Cinnamon Roll Shakeology


Ingredients

1 Scoop Vanilla Shakeology
1 Tsp Vanilla Extract
1 Tsp Almond Butter
1 Cup Unsweetened vanilla almond milk
1 Tsp Cinnamon
6-8 ice cubes
1 Tsp Honey
1 Banana

Blend and enjoy!

Post vacation 3 Day Refresh!



This is my "I don't know where to look" face 😂

Northern Ireland
Sunday night I returned from a very indulgent 10 day trip to Northern Ireland.☘☘☘

As an online health and fitness coach it always seems to surprise people that I don't live my life completely obsessed with fitness and nutrition or denying myself simple pleasures we all like to enjoy every day.

Guys, when I go on vacation, I GO ON VACATION! I take a vacation from my routine, I enjoy things I don't get the opportunity to enjoy regularly, and I focus on spending time with close friends and family and taking in the local culture.

I don't go on vacation worrying about where I'm going to get a workout in...though I can tell you my feet took a pounding on this trip with all the sightseeing we did.

I don't go on vacation worrying about what the healthiest thing on the menu for dinner is. I enjoy the experience.

I know that when I get home, I'll get right back on track as fast as I can and that starts TODAY for me.

I am 100% all in for another round of the 3 day refresh, something that has worked wonders for me in helping me lose holiday bloat and water weight and prime my body to jump into a new program. I absolutely indulged on my Ireland vacation and loved every minute of it, but I'm ready to get back to my healthy roots.

So for the next 3 days I will be drinking 3 daily shakes, a fiber drink, plenty of filtered water, plus eating a wide array of fresh fruits, vegetables and healthy fats to keep my energy and metabolism going.

I've lost anywhere between 3-9lb on the 3 day refresh, but the scale isn't what matters here, it's how it makes me feel. I ALWAYS feel healthier, better in my clothes and MUCH less bloated by the end. Sometimes it's on the last day I get the best results, sometimes it's 1 or 2 days after I've finished it. Everyone is different. Each experience with this refresh is slightly different for me.

Lose 3-5lb
Lose 3" of bloat from my stomach
Better energy


After that, I'm jumping into the Master's Hammer & Chisel program!
